| 2 cup | cherries |
| .5 cup | red wine (cab) |
| .5 cup | sugar |
| 1/2 | lemon (juiced) |
| 1 | white onion |
| 1 | brie wheel |
| 1 | puff pastry |
| 1 | egg |

Cherry Compote Directions
- Slice onion into thin slices.
- Place all ingredients into a pot, bring to a boil.
- Simmer until reduced, at least 30 minutes.
- Add pepper/salt, extra lemon, to taste.
- Continue simmering until reduced.
Puff Pastry / Brie Wheel
- Roll out your puff pastry and drape into small cast iron skillet.
- Place Brie round in the center of the puff pastry. (Skin on or off, your choice)
- Top with Cherry Compote
- Pull edges up and over, pinching edges together.
- Refridgerate for at least 10 minutes.
Prep for serving
- Pre-heat oven to 400 F
- Apply egg wash to pastry
- Bake 35 - 40 minutes
- Cool for 5 - 10 minutes
