Baked Brie with Cherry Compote

Cook Time: 45 - 90 min
Ingredients:
Amount Ingredient
2 cup cherries
.5 cup red wine (cab)
.5 cup sugar
1/2 lemon (juiced)
1 white onion
1 brie wheel
1 puff pastry
1 egg
Recipe:

Cherry Compote Directions

  1. Slice onion into thin slices.
  2. Place all ingredients into a pot, bring to a boil.
  3. Simmer until reduced, at least 30 minutes.
  4. Add pepper/salt, extra lemon, to taste.
  5. Continue simmering until reduced.

Puff Pastry / Brie Wheel

  1. Roll out your puff pastry and drape into small cast iron skillet.
  2. Place Brie round in the center of the puff pastry. (Skin on or off, your choice)
  3. Top with Cherry Compote
  4. Pull edges up and over, pinching edges together.
  5. Refridgerate for at least 10 minutes.

Prep for serving

  1. Pre-heat oven to 400 F
  2. Apply egg wash to pastry
  3. Bake 35 - 40 minutes
  4. Cool for 5 - 10 minutes
