One Pot Chili Mac

Ingredients:
Amount Ingredient
1 lb ground beef
0.75 cup onion (diced)
1 clove garlic (minced)
2 cups beef broth
1 cup water
14.5 oz petite diced tomatoes (undrained)
6 oz tomato paste
1 tbsp chili powder
1.5 tsp seasoned salt
1 tsp cumin
0.5 tsp brown sugar
0.5 tsp onion powder
15 oz kidney beans (drained and rinsed)
8.75 oz corn kernels (drained)
1 cup elbow macaroni (uncooked)
to taste kosher salt and black pepper
Recipe:
  1. Heat a large skillet or Dutch oven over medium-high heat.
  2. Add ground beef and onion, breaking up the meat with a wooden spoon.
  3. Cook until meat is no longer pink (about 7 minutes).
  4. Add garlic and cook for 1 more minute.
  5. Drain excess fat from the pan.
  6. Add all remaining ingredients to the skillet.
  7. Stir to combine and bring to a boil.
  8. Reduce heat to a simmer and cook uncovered for 12-15 minutes, until noodles are tender and sauce thickens.
  9. Taste and adjust seasoning with salt and pepper if needed.

Note: Can substitute ground turkey for beef. Optional toppings include: shredded cheese, sour cream, sliced green onions, cilantro, avocado, diced red onion, corn chips, or serve with cornbread.
