- Heat a large skillet or Dutch oven over medium-high heat.
- Add ground beef and onion, breaking up the meat with a wooden spoon.
- Cook until meat is no longer pink (about 7 minutes).
- Add garlic and cook for 1 more minute.
- Drain excess fat from the pan.
- Add all remaining ingredients to the skillet.
- Stir to combine and bring to a boil.
- Reduce heat to a simmer and cook uncovered for 12-15 minutes, until noodles are tender and sauce thickens.
- Taste and adjust seasoning with salt and pepper if needed.
Note: Can substitute ground turkey for beef. Optional toppings include: shredded cheese, sour cream, sliced green onions, cilantro, avocado, diced red onion, corn chips, or serve with cornbread.
