Carrot Top Pesto

Ingredients:
Amount Ingredient
1 cup carrot tops loosely packed stems removed
1.5 cups fresh basil leaves tightly packed
.33 cup pine nuts
2 tbsp lemon juice
2 cloves garlic peeled
.5 tsp sea salt
2 tbsp extra virgin olive oil
1-2 tbsp water
Recipe:
  1. Remove carrot greens from bunch, rinse, and select freshest greens.
  2. Add all ingredients except water to food processor.
  3. Process until smooth.
  4. Add water 1 tbsp at a time until creamy and dippable.
  5. Taste and adjust salt, lemon juice as needed.
  6. Serve with roasted vegetables, pasta, or as spread.
