Ingredients:

3.5 cups | flour |
2.5 cups | shredded cheddar |
.5 cup | chopped Jalepenos |
1 tblsp | kosher salt |
2 cups | warm water |
2.25 tsp | instant yeast |
1 tblsp | olive oil |
Recipe:
- Preheat oven to 425 F.
- Combine flour, ~2 cups of cheddar cheese, jalepenos and salt. (If using pickled jalepenos, make sure to pat dry first).
- In separate bowl, combine water and yeast.
- Pour flour mixture into water, stirring until the dough comes together.
- Fold dough to the center in the bowl 8 times. Cover with a towel and let rest in warm area for 60 minute until doubled in size.
- Fold dough to the center in the bowl 8 times. Cover with towel and let rest for 30 minuntes.
- Put lightly oiled dutch oven in to pre heat.
- Peel dough out of bowl onto a lightly floured surface. Sprinkle remaining cheese in “clumps” on dough. Fold 8 times towards the center.
- Brush the top of dough with olive oil, sprinkle with some extra shredded cheese and jalepenos. Cut X into top of loaf.
- Place dough into HOT dutch oven, put dutch oven back in to oven covered.
- Bake for 30 minutes, then remove lid. Bake for another 20 minutes until dough is golden brown.
- Remove bread from dutch oven and place onto wire rack to cool for at least 1 hour.
