Foccacia Bread

Ingredients:

4 cups | all purpose flour / bread flour |
2 tsp | kosher salt |
2tsp | instant yeast |
2 cups | warm water |
4 tbsp | olive oil |
sea salt | |
2 tsp | rosemary |
Recipe:
If you don’t like rosemary, use other flavors.

In a large bowl add together flour, salt, and yeast.

Add the water.

With a spatula, mix until the liquid is absorbed and the dough forms a sticky ball.

Rub the surface lightly with olive oil.

Cover the bowl and allow to rest for 12 - 72 hours.

Line two 8-9 inch pie plates or a 9x13 pan with parchment paper or grease with butter/non stick cooking spray.

Pour 1-2 tablespoons of olive oil in the center of the pan.

Deflate your dough by releasing it from the sides of the bowl and pulling into the center. Rotate the bowl a quarter of turn with each deflation.

Place dough in the center of your pan on top of the oil. Allow to rest at room temperature for 3-4 hours.

Set rack in the middle of the oven and preheat to 425F.

Add your toppings to the top of the dough.

Pour 1 tablespoon of oil around the edge of your dough.

After coating your fingers in oil, press down into the dough to create dimples.

Season with sea salt to taste.

Bake for 25 to 30 minutes, until golden and crisp underside. Let cool for 10 minutes before serving.
