Key Lime Ice Cream

Amount Ingredient
1 cup erythritol/stevia mix
1/2 cup key lime juice
4 eggs
1/2 cup un salted butter
2 cups heavy cream
  1. Put sweetener, lime juice, eggs into a medium sauce pan. Whisk.
  2. Add butter, place on medium heat.
  3. Allow butter to melt, then whisk continuously for at least 10 minutes as mix thickens. (Should coat the back of a spoon that has been dipped in.)
  4. Place into bowl. Add cream.
  5. Whisk/Whip until smooth.
  6. Add additional sweetener to taste.
  7. Put into containers, place into freezer.

Note : Can put mixture into ice cream maker instead of freezer. Also just refrigerating leaves you with something more akin to a sweet yogurt.
