- Activate yeast by hydrating with lukewarm water and sugar. Let sit for at least 15 minutest.
- Measure flour and put into mixing stand bowl.
- Add yeast mixture.
- Add water until a soft smooth dough forms.
- Mix on setting 2 for 4 - 5 minutes.
- Cover dough and allow to rise for 45 minutes.
- Cover and refrigerate overnight. (Up to 24 hours)
- Remove 2 - 3 hours before needed and allow to come to room temperature.
- Divide into 2 portions.
10.On a lightly greased pan/cooking dish spread dough out slowly, taking 15 minutes breaks if it shrinks away from the edges.
- Allow to rise for another 90 minutes on/in the cooking dish.
- Bake at 450 degrees for 8 - 14 minutes, until starting to “set”. (thicker crusts will need closer to 14 minutes)
You can take the pizza crust at this point and freeze for 2 -3 months. Allow to cool fully to room temperature before wrapping for storage.
- Top your pizza and put back into the oven at 450 degrees for another 10 - 15 minutes.
