Skillet Pork Chops

4 | 1 inch thick pork chops |
1 tbsp | flour |
1 tsp | chili powder |
1 tsp | garlic powder |
1 tsp | onion powder |
.5 tsp | smoked paprika |
.5 tsp | black pepper |
1 tbsp | vegetable oil |
1 cup | chicken stock |
1 tbsp | apple cider vinegar |
2 tsp | honey or brown sugar |
1 tbsp | butter |
2 tbsp | parsley (optional) |

You can substitute most of the spices for any dry rub.
Prepare Chops
- Lightly salt porchops and allow to rest for 30 minutes.
- Make your spice rub by mixing: flour, chili powder, garlic powder, onion powder, smoked paprika, and black pepper.
- Pat pork chops dry, and coat with spice rub.
- Heat oil in skillet on medium high. Cook pork 2-3 minutes on each side. (If you have a fat cap, hold on fat cap for 30 seconds.)
- Reduce heat to low, cover skillet and cook an additional 6-10 minutes. (Until internal temperature reads 145 F)
- Transfer chops to a plate, loosely cover with aluminum foil and let rest for 5 minutes.
Pan Sauce
- Increase heat to medium high. Add chicken stock, vinegar, and honey. Scrape pan well.
- Bring to a simmer and cook until reduced by half. Season to taste.
- Remove from heat and add cold butter.
- Add pork chops back in, spoon sauce on top.
Serve.
