Spicy Salmon Sushi Bake

2-3 cup | sushi rice or farro cooked |
1 1/2 tbsp | rice vinegar |
1-1.5 lbs | salmon fillet |
8 oz | imitation crab (optional) |
Salt & pepper | to taste |
2 tbsp | coconut aminos |
1 tsp | honey |
1 clove | crushed garlic |
2 | scallions |
2 tbsp | spicy mayo |
2 tbsp | cream cheese |
1/2 cup | mayo (for homemade spicy mayo) |
1/3 cup | sriracha (for homemade spicy mayo) |
1 tsp | sesame oil (for homemade spicy mayo) |
Eel sauce | for topping |
Furikake | for topping |
Sesame seeds | for topping |
Jalapeños | sliced |
Recipe:

Preheat the oven to 375 F.

Rinse and cook rice. Season with vinegar.

Prepare salmon with coconut aminos, honey, and garlic. Bake for 20 minutes, flake it in a seperate bowl.

Mix mayonaise, sesame oil, cream cheese, sriacha together.

Add imitation crab.

Add white parts of scallions, jalepenos if desired.

Layer rice, furikake, salmon mix into baking dish.

Bake for 10 minutes at 400, then broil for 3-5 minutes.

Top with furikake, sesame seeds, and jalapeños.

Drizzle with additional sriacha and teriyaki sauce.

Serve warm and enjoy.
you can replace the furikake with crumbled sea weed snack sheets and sesame seeds in a pinch
